Super well balanced and sweet with a silky mouthfeel. Lime acidity up front, malty chocolate sweetness underneath. This is the kind of cup that reminds you why honey-processed coffees have a cult following.

About this coffee

Novo Coffee's Elite Honey comes from producer Olman Sauceda at Finca Elite in Nueva Segovia, Nicaragua. Novo has bought from Olman since 2018, and Finca Elite took first place in the 2025 Nicaragua Cup of Excellence.

The variety is Pacamara, a big-beaned hybrid known for sweetness and body. The honey process means the cherry is dried with some of its mucilage still clinging to the bean, which is where the extra body and honeyed sweetness come from.

Roaster's notes

Malt, honeydew melon, lime zest.

Working through Denver roasters ahead of my trip next week. Elite Honey is a strong start.
