Sterling Coffee Roasters "El Borbollon" — Washed El Salvador

A darker-than-usual but beautifully developed washed Red Bourbon from El Salvador: cocoa powder for days, heavy rich body, great black.

Drank it black. This one runs a touch darker than my usual preference, but I would not call it dark, just really well developed. Tons of cocoa powder, a heavy rich body, and it drinks great straight. It would handle cream delightfully too.

The bag promises butterscotch and cocoa, and my palate landed squarely on the cocoa side. This is a washed Red Bourbon from the Santa Ana hills of the Apaneca-Ilamatepec range, grown by the Alvarez family at 1400 to 1500 meters in volcanic soil. Washed processing keeps the cup clean, so the cocoa reads as powder, not muddle.

A reunion cup

There is history here: El Borbollon used to be the backbone of Sterling's Blendo Stupendo blend, and after some years apart the two old friends have reunited as a single origin. You can taste why they wanted it back.

Would I drink it again? Yes. A really well sourced, well developed El Salvador.
